Cheese puffs

Welcome to Little Chef’s Apron! I m sure all of you must have heard about eclairs that is made of choux pastry or cream puffs that is filled with custard. Here, I thought why not to fiddle the original recipe and turn it to a complete opposite taste!

The puff:


2 eggs

1/2 cup flour

1/2 cup water

1/4 cup salted butter


. The beauty of this recipe is that such a delicate recipe is made from minimal ingredients!

. First, add water to a pan. Then add cold butter that is cut in pieces as ,if you put the stick, then by the time you add the butter and it melts, the water would evaporate.

. Let this come to a boil and keep mixing. Keep the flour handy as when you have to add it, there won’t be time to measure it out.

. once it starts boiling, remove it from the stove and switch off the flame. Immediately dump in the flour and start mixing.

. Keep mixing with the spatula vigorously for a minute. At first it would look somewhat like this.

. Then it would form a smooth dough. The idea is to cook the flour from the heat of the water and butter.

. Pop it back on the stove for a minute to release any excess moisture that is in the dough. Keep mixing or else it would stick to the pan.

. Let it cool at room temperature till 20-30 minutes. If you use the hot mixture as such, then the eggs would curdle and get cooked which is something you don’t want.

. Add in one egg at a time and mix it completely with the mixture. When it is all incorporated, add the other egg. It’s consistency should be very silky and should fall off the spatula in batches.

Preheat the oven at 200*C for 10 minutes. Like a baking tray with parchment paper or silicon mat. Add the mixture to a piping bag and place pressure on the the top of the bag.

. I have used a round tip here but you can even use a zip lock bag. Pipe them out on to the tray making sure that they are in a circle shape. It is very similar to the piping of macaroons batter.

. Bake them at 200*C for 10 minutes and then at 160*C for 15 minutes. If they need to puff up more then bake then for a little longer.

Cheese filling:


1 cheese slice

1/2 tsp seasonings of your choice

1tbsp butter

1 tbsp all purpose flour

1 tbsp chopped coriander

1/2 cup milk


. First add the butter to a pan and then the flour. It would form a crumbly texture and then on low flame add the milk slowly.

. Mix it well and it would start to thicken. Then, add the seasoning with salt and coriander.

Switch off the flame and then add the cheese. It would melt because of the heat of the liquid.

Add it in a piping bag and cut a very small tip.

Make a cut on the bottom of the puff like this and fill the cheese in. When it’s full remove it and repeat the process for all.

Plate it and sprinkle some oregano and cheese and serve it hot!
