Hara bhara kabab-treat for vegetarians!

Welcome to Little Chef’s Kitchen! Today, I thought of making something that is delicious of vegetarians as well as non vegetarians. It was tasty, crispy, and nutritious. It is a dish from indian cuisine and is not spicy or deep fried.

Although it had a little bit of oil in it, there were some very healthy ingredients that I would not prefer to eat normally. If you are looking for a healthy, tasty snack for everyone to enjoy, this is the perfect recipe for it.

Ingredients:

2-3 cups of spinach

3 tbsp coriander/mint leaves

1/3 cup green peas

5 tbsp ginger garlic paste

3 boiled potatoes

2 tbsp corn flour

1/4 cup breadcrumbs

2 tsp garam masala

2 tsp red chilli powder, coriander powder and salt to taste

oil to shallow fry

Water for blanching

Directions:

First, place a good amount of water on the stove and let it come to a boil. When it is boiling take it off the stove and add the washed spinach.

Within seconds, its size would be reduced to half. After 2-3 minutes remove the spinach and put in ice cold water. This will help to retain the green colour.

Also, add the peas to the boiling water and let it cook for 3-4 minutes. Add the mint, spinach and peas to a blender jar squeezing out all the water.

Blend this into a fine mixture. If required, add a tsp of water. In a pan add a tbsp of oil and fry the ginger and garlic.

Add the green mixture and cook until completely dry. We are doing this so all the water can be lost. The time it has to be cooked, depends on how dry or wet your mixture. One thing to remember is that no excess water should be there.

When this is done, add the potatoes that are roughly mashed.

Add the corn flour, breadcrumbs, spices and salt at this step. Give it a good mix until it comes together as a mixture which is well combined. Try to make sure that there aren’t any lumps of the potatoes.

Take a ball sized mixture and flatten it to get shapes like these:

Let some oil get hot in a non stick pan. Place the kebab and fry until crisp. Flip and cook for another 2 minutes. Remove from the stove, serve hot and crisp with mayo and a garnish of lemon and onions!
