Christmas pistachio cupcakes!

Hi everyone! I hope you are having a wonderful time and enjoying the holiday season!

I have been trying out so many Christmas recipes and this is one of them.

It was so fun to make it and was incredibly easy too. I went with pistachio as a flavour because the naturally green colour represents the colour of Christmas.

Moving on with the recipe,

Ingredients required:

1/2 cup curd/yogurt

1/2 cup sugar

1/2 tsp vanilla

1 cup flour

1 tsp baking powder

1/2 tsp baking soda

1/4 cup oil

1/4 cup coarsely powdered pistachio

1-2 tbsp milk if required

Directions:

First, add curd, sugar and whisk extremely well. Add the baking powder and soda and combine until no lumps are seen.

It should become frothy and this will help to rise the cupcakes better.

Add the oil and vanilla and mix slowly as if done quick then all the air incorporated before will be knocked out.

Next, sieve the flour and add the pistachio. I have just run them in my food processer. Make sure you don’t use the ones that are salted or roasted.

Mix the batter well and check the consistency. It should be a little thick but still falling off the spatula in batches. Add milk if needed.

Add liners to the muffin tray and preheat the oven at 170 degree celsius. Fill the liners until 3/4th of it and bake at 170 degrees for 17-19 minutes.

I have decorated them with some whipped cream and sprinkles, you can serve them with anything you like! (make sure you cool them completely first before frosting)

You could also serve them plain with a dip of chocolate too.

I also wanted to share with you guys about my first Christmas order! I made milk chocolate truffles along with chocolate and nuts teacake and cinnamon teacake!

  1. Ahh these cupcakes look soooo tastyyy! Loved the recipeee❤
    For the answer, me and my sister decorate the Christmas tree every year 2 days before Christmas, our parents usually keep gifts for us under the tree before we wake up so that we can open them up (which is the best thing and the only thing I’m waiting for to do tomorrow💫) And then, I don’t know….I meet up with my friends, sometimes virtually or sometimes in person…..It’s just a fun day overall….What about you?

    1. Ohh that sounds amazing!! We already received our gifts just to mix things up a little! My mom and I usually prepare dinners and desserts to go with it! My sister decorates the house with the tree and other decorations!

  2. You had me at ‘pistachio,’ Anita’s favorite nut! Too late for Christmas now, as it is coming tomorrow, but this will still make the New Years Day celebration brighter!
    We are just sitting at home and watching a Christmas movie tonight, probably It’s A Wonderful Life. Bought some lobster tails to cook up for a special supper as you cannot get live lobsters any more here in Lexington, Ky. 😞
    But the tails should be good!

  3. The cupcakes look fabulous. Unfortunately, my wife is allergic to pistachios !

    We tend to put up Christmas lights at the end of November (it can take a couple of weekends to do), then the tree on the first of December and decorate the house. We then take everything down on the 12th day after Christmas Day. Christmas Day and Boxing Day are alternated between different family events 😊
