Welcome yo Little Chef’s Cookie day! Today we will make pista cookies which were really delicious. They had a touch of Indian flavours as well as western. It seemed like a contrast which I loved so much.
They all had a crunch because of the nuts. The were crisp and tasty. Nothing was better than the aroma of freshly baked cookies that lingered in our house for a very long time. If you had been there, you would make these cookies every single day!
Here is how to make this recipe:
Ingredients:
1/2 cup unsalted butter
1/2 cup powdered sugar
1/2 tsp vanilla essence
1/4 cup chopped pistachio nuts
1 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 tbsp of milk( may or may not be required)
Directions:
First, add the butter to a bowl. Use a whisk to smoothen it out if it is not at room temperature.

You may have noticed that there isn’t any icing sugar in the ingredients mentioned unlike my other cookies recipes. This is because, the crispiness needed will come from the nuts.
After the butter is whisked, add the powdered sugar and mix well until combined. Also add the vanilla essence.

Place a sieve over this mixture and add the flour, baking powder and soda. Sieve the dry ingredients completely.

Add some chopped pistachios into this. Use a spatula to bind all ingredients together.


It may or may not require milk to make a roughly binded dough. Place these in cling wrap and and try to get a square shape and cut them in thickness as you want.


Place in fridge for 20 minutes and then bake on a tray lined with parchment paper. Bake in a preheated oven at 170 degree for 15 minutes and then for 5 minutes at 180 degree.
After baked, cool for 15-20 minutes and then serve warm!
