Vegetable wrap: really simple

Welcome to Little Chef’s Apron! Today we’ll make something that would be a delight to vegetarians. However, non vegetarians don’t have to compromise. They could also add non veg pieces or this recipe would also be perfectly delicious!

The dough:

Ingredients:

1 cup all purpose flour

1 cup whole wheat flour

Salt to taste

3/4 cup water( may vary because of the flour)

2 tbsp oil

Directions:

. Add the flour and salt in a a bowl.

. Then add the oil. Mix it nicely with the flour and it should form tiny knots in them.

Add the water slowly in this mixture and form a smooth dough.

. Let it rest for 10-15 minutes and move on with the stuffing.

The cutlet:

Ingredients:

3-4 boiled potatoes

1/2 cup grated paneer

1 tsp salt and Indian masalas

Capsicum, onion, garlic,ginger cut in desired shape

Corn flour to dust and for binding

3 tsp oil for stuffing

3 tsp oil for frying

Directions:

. First , make paste out of ginger and garlic and add it to a pan with oil.

. Then add in the onion and let it cook for 2 minutes while continuously stirring it.

. Add in the capsicum and carrot and keep stirring till they are cooked.

. Mix in the masalas and salt and make sure that it’s all incorporated

. Switch off the flame and then add paneer. This will make sure that the paneer doesn’t become hard. When it’s all mixed , keep it aside and let it cool down completely.

. Then to this add the boiled potatoes and just a little bit of corn flour. Add some salt to this mixture too as there is no salt in potatoes.

. Then make a dough like mixture and form cutlet shapes. Add oil to a pan, and make sure that the oil is very hot. Then put the cutlet here and flip once they are brown.

. This will happen very quickly so make sure that it doesn’t burn.

The assembly and parantha:

Ingredients:

1/2 cup cheese spread

1/3 cup pasta sauce

1/2 cup oil

2 tbsp lemon juice

Cut onions and capsicum

Directions:

. First, take a small ball of dough and roll it on a rolling board with some flour.

. Then keep it in a pan on high flame and then flip it when it cooks. Then add a tsp of oil on both the sides.

. Remove it once it gets a little crisp but not hard.

For the assembly, apply some sauce of cheese spread and pasta sauce on the base and then place the cutlet.

Squeeze some lemon juice and add vegetables.

. Wrap it in butter paper and serve !
