Almond cookies!!

Hi everyone! I hope you are having a great day! I made these cookies two days back and it was super fun..

It is healthier than normal cookies as my recipe uses whole wheat flour and not all purpose flour. However to make it more healthy, you could replace sugar with jaggery or brown sugar and butter with clarified butter or ghee.

Nowadays, my family and I are in for a challenge to leave out packaged food at the most.. So my mom and I are making all snacks for us to eat at home..

Ingredients required:

1/2 cup unsalted butter

1 tsp corn flour

1/2 cup sugar

1 cup all purpose flour

1 tsp baking powder

1/2 tsp baking soda

1 tsp vanilla essence

1/3 cup sliced almonds

a pinch of cardamom powder

milk if required.

Directions:

First in a blender jar, add sugar and corn flour and powder well. Adding corn flour makes sure that there is just the right amount of softness and crunchiness to the cookie.

Add this to a bowl along with butter and vanilla. Whisk it well for 3 to 4 minutes until combined and fluffy.

Place a sieve and add flour, baking powder, baking soda . Sieve it thoroughly and add the cardamom and almonds.

You could also use almond essence but I feel that the flavour is too overpowering and natural almonds give a nice crunch and flavour.

Now, mix the wet and dry ingredients well until a dough comes together. If your dough is crumbling and not holding its shape to be rolled out, add a teaspoon of milk. Check the consistency and see if it needs more.

Then pack it in a cling wrap and refrigerate for an hour. Once that is done, try to roll the dough out carefully in between sheets of parchment or butter paper.

Then dip a cookie cutter in flour and cut the dough in any shapes you want. I found the champagne glass to have the perfect size for the cookies I wanted so I used that. You could also sprinkle some almonds on the top. Refrigerate the cut out cookies for 15 minutes and bake in a preheated oven at 170 degree C for 15 minutes.

Then bake for 3 minutes at 180 degree C. Let it cool completely and serve!
