Healthy chocolate chip muffins

Welcome to little chefs apron! Today we will make a very healthy recipe which is very delicious. These muffins are perfect for you if you are craving something sweet and don’t want it to add on to your calories a lot! I am also starting a new idea for my blog where at the end of the post we would discuss something related to the recipe. Stay till the end to find out!

Ingredients:

¾ cup curd

½ cup powdered white sugar​

1/3 cup powdered brown sugar

1.5 tsp baking powder

¾ tsp baking soda

3 tbsp melted butter

1cup + 1 tbsp whole wheat flour

1 tsp vanilla essence

3 tbsp chocolate chips

Milk if required

Directions:

Preparation time: 15 minutes

Baking time: 15 minutes

Cooling time: 10 minutes

First, add curd and powdered sugar in a bowl. You can powder both the sugars together. Whisk it till it’s smooth for about 2-3 minutes. Make sure that the ingredients are at room temperature.

Now, add in the butter and the essence and mix well. Also add in the baking powder and soda and combine it well with the curd.

Let it sit for 1 minute .this will make sure that the baking powder and soda react with the curd and make it foamy which in turn would make the muffins rise.

Sieve the wheat flour into the wet ingredients. If you are using all purpose flour then there is no need to sieve because maida is already light. Also because muffins are a little denser than cupcakes.

Now give this a good mix and add milk if required to make a smooth thick batter that falls off in intervals.

Now,mix and coat the chocolate chips with a tbsp of flour. This is done so that the chips have some volume and don’t sink in the bottom.

Add it to the batter and mix well. Now, grease the muffin or  cupcake tray with a little oil. 

And pour the batter until its 3/4th . sprinkle some chocolate chips on the top and bake it in a preheated oven at 180⁰C for 15-17 minutes.

Cool it down for10 minutes and they will come right out of the tray. Enjoy the healthy, warm, aromatic, delicious muffins! 

Now about our discussion, we will talk about the difference between cupcakes and muffins. 

Most people have this thought that both of them are the same thing. But here are the differences:

Cupcakes are more towards the fluffier side which is why their batter is flowy while muffins are a little dense having a thicker  batter.

Muffins are usually made without the cupcake liners while cupcakes are made only with the liners.

Muffins have a fruity element to it sometimes which can be blueberry , cranberry or anything else like tutti frutti, chocolate chip etc. on the other side cupcakes have a filling and a frosting.

Muffins are crispier on the edges and softer in the centre while cupcakes are same throughout.
