Christmas series: last episode: Apple cinnamon tree tea cake

Welcome to Little chefs Christmas! First of all, MERRY CHRISTMAS!!

After posting the earlier recipes, I thought why not post a tea cake recipe? And anyway, cinnamon and Apple’s combination are one of the most festive flavours. I found a Christmas tree mould and I’ll be using that but if you don’t have it then reduce the recipe in half for a normal 6 inch tin.

Ingredients:

2 sweet apples

1 tsp vanilla extract

1 cup all purpose flour

1 ½ cup of wheat flour

1 ½  cups powdered sugar

1 ½ tsp baking powder

½ tsp baking soda

¾ cup oil

Milk as required

1 ½ tsp cinnamon

Directions:

First take the apples and make sure it’s not sour and hard.( do a taste test).

Peel it and take out its seeds and the stem .

Cut it into pieces and make a fine purée out of it in a blender jar. What we have here is basically applesauce.

The taste of this is so magical that you wouldn’t even taste the apple after it bakes. You can also use bananas and any other pulpy fruit in place of apple.

To this add the oil and give it a good mix. To this add the sugar and vanilla and mix it as hard as you can.

. To this add the flour( sieved) as its not as light as maida.Sieve the baking powder and soda with this and also the cinnamon .

Mix it nicely only until the flour is incorporated. And add milk to the batter to make a smooth batter.Preheat the oven at 180*C for 10 minutes .

Grease your mould with oil and dust it with flour.

Pour the batter in it and bake it at 180*C for 30 minutes . The time may vary and check the cake at 25 minutes. Don’t open it too much or the heat would escape and the cake would not rise.

The tooth pick should come out clean and let it cool on room temperature for 20 minutes.

Now, this is the time to go crazy, call out your family and get decorating! Use, chocolate decorations,candies,sprinkles,pearls,edible decorations! Anything! This is the most fun part of ths cake and all the festive flavours are there.
