Mini cheesecakes!

Hi everyone! I had tried cheesecakes for the first time and it was incredibly fun..

These classic new york cheesecakes were very delicious and also easy to make!! I went for smaller cheesecakes because it was my first time and making a big 6 inch one was a little out of the place. Anyway, I always heard that making cheesecake was a hard task and you needed a lot of practice to do so. But, once I made them, I knew that it was all just a thought and that anyone who has cream cheese can make them easily.

Starting off with the recipe,

Ingredients required:

8-9 digestive biscuits/graham crackers

1/4 cup unsalted butter

1/2 cup cream cheese

2 tbsp fresh cream

1/3 cup sweetened condensed milk

1 1/2 tbsp corn flour

1/2 cup whipping cream

Directions:

First, crush some biscuits in a chopper or food processer and add melted butter to it.

Take a muffin tray and place cupcake liners. Add a spoonful of the biscuit mixture to the base and spread evenly. Chill this in the fridge for 10 minutes.

Add softened cream cheese to a bowl.

Add fresh cream and whip for a minute or two on low speed.

Add the condensed milk and corn flour and mix well.

We are not adding any extra sugar here as the sweetness comes from the condensed milk. The corn flour is added to give the batter binding. You could also replace it with flour.

Mix all of this well to get a consistency like this.

Pour the batter equally in the liners over the biscuits all the way to the top. Bake them in a preheated oven at 160 degree C for 30 minutes.

Once baked, let them cool down completely and then refrigerate for 2-3 hours. After this, you can eat them plain or whip some cream like I did.

I decorated them with some pearl sprinkles and golden leaf. Serve cold and enjoy!
