Welcome to Little chef’s apron! Today, we will be making something for a festival! As you know, holi is just around the corner, we will be making an Indian dessert that you can try out for holi! For those of you who don’t know what holi is, it is an indian festival where sweets are made and we play with colours! Today we will make ras malai jar cakes. They are delicious and you should definitely give them a try!
Ingredients for the rasmalai:
500 ml cow milk for chenna
10 ml vinegar dissolved in a tbsp of water
For the ras:
1 cup milk
A few strands of saffron
4 tbsp sugar
Directions:
First, add cow milk to a pan and let it boil. Get the chenna out of the milk by adding vinegar(the solid part of milk)

Once it done, strain it out and let it sit for 2 hours. Then knead it in between the palms of your hands until it forms a dough like consistency.


Form rasmalai shapes out of it and add sugar, water and cardamom to a vessel on high flame. We only need to cook it until sugar dissolves. No string consistency is needed and then lower the flame.
Now, add the rasmalai in the sugar syrup and let it cook for 10 minutes on low flame until they double in size. After that, put them in warm water. This will help to release the excess sugar syrup.

For the soaking syrup, add the saffron milk and sugar to a pan and let it come to a boil. After that refrigerate the ras with the rasgulla in it. You can eat these it is or make jars like I am.

Ingredients for cake:
¼ cup curd
¼ cup oil
½ cup sugar
½ cup flour
½ tsp baking powder, ¼ tsp baking soda
A pinch of cardamom
Milk as required
Directions:
Add oil, curd, sugar and cardamom to a bowl and whisk it well.

Then, sieve flour, baking powder and soda into the wet ingredients.

Add milk as required to make a flowy batter that falls like ribbons.
Add the batter in a greased tin and bake it at 180⁰C for 20 minutes or until a toothpick comes out clean in a preheated oven.


Assembly:
Ingredients:
The rasmalai prepared earlier
Cake chopped in pieces
Chopped nuts(almonds and pistacchios)
½ cup whipping cream
Directions:
You can use non dairy or dairy cream. I am using dairy whipping cream. Whip it until stiff peaks form and add a pinch of cardamom.


Add a layer of cake in the glass or jar you are using. Soak the cake with the ras and add layers of the above mentioned ingredients as you wish!
