Vacation series: episode # 9: Chilli garlic spaghetti 🍝

Welcome to Little Chef’s Apron! Today we will be making something savoury! I tried this recipe as an experiment and I never expected it to be this tasty!

 

It was so delicious and it required the most basic flavouring agents. I am pretty sure you figured out what those are by the title, chilli and garlic!

 

I thought if I could use normal noodles instead of spaghetti but I understood why spaghetti was best. It is slightly yellow in colour, it is thicker and has the authentic pasta taste.

 

 Whereas normal noodles lack all that and which is why their taste fits in Chinese cuisine.

 

If you want , you can use them too and make your own version. Let us get started with the recipe:

 

Ingredients required:

1 packet spaghetti( I am using the brand, ‘happy chef’ )

1 tsp soy sauce ( optional)

4 tbsp butter

8-9 cloves garlic

2 green chillies

½ cup grated cheddar/Parmesan cheese

A little bit of chopped coriander/parsley

Seasonings like oregano, chilli flakes, salt and pepper

Oil and water to boil

First, fill a big vessel with water And add lots of salt. Also add 2 tablespoon of oil. Once it comes to a boil dip the spaghetti about how much deep it can go.

When The side in water starts to bend lift it with a spatula and place the other side in the water. Soon it will start to cook and fold into the available water

Keep cooking until there is no raw taste. Or as the Italians call ‘al dente’

Then strain it making sure you save some of the pasta water. Then, wash the cooked spaghetti with some cold water.

Grate the cheese, chop the green chillies, garlic and coriander.

In another vessel add the butter and let it melt. Add the green chilli and fry well on medium flame. Fry until the garlic starts browning and a raw smell has gone.

Add the soy sauce which is completely optional. I am adding it only for the colour. Mix in the seasonings and the pasta water.

Cook for 2-3 minutes before adding the spaghetti. After that is done, add the grated cheese and mix until the cheese is melted. Switch off the flame and toss in the coriander.

Serve hot with a garnish of cheese!

      1. Yes mate, I’m glad you gave us a recipe with both of them. I’m surprised I haven’t seen that combination more often. A pizza place not far from me does a gourmet pizza called
        ‘Chilli & Garlic king-prawn’.
        Mmmmmmm… it’s also got fresh onions and char-grilled capsicum! ❤️
