Pink sauce pasta: Middle East cuisine

Welcome to Little Chef’s Apron! Today we’ll make something that I have innovated from the original recipe. It’s really delicious and very easy to make. It’s ingredients are very simple and the result is amazing!

The pasta:

4 cups pasta( anything, shell, macaroni,spiral,penne)

Enough water in which the pasta is completely submerged.

3 tbsp salt

2 tbsp oil

1/8 cup chopped onions and corns

Directions:

. First, add the water, oil and salt in a large vessel. Stir it well and switch on the stove and keep it on high flame.

. Once it comes to a gentle boil, add in the pasta.

. Once it’s cooked completely, strain it. But don’t throw away all the water. Keep some pasta water for later use. It adds a flavour to the pasta.

. Pour some cold water over this so that it stops cooking and separate from each other.

. Take a pan, add some butter and oil, and then the corns and onions.

If you want you can add some garlic but it’s optional. Then, let the vegetables cook for at least 3-4 minutes and keep sautéing

. After this, add it to the pasta and mix it well.

The sauce:

Ingredients:

3 tbsp pasta sauce, chilli sauce, soy sauce, 1/4 tsp vinegar

2 tsp ginger garlic paste

1 tsp seasonings( basil,oregano,pasta seasoning etc)

1 tbsp all purpose flour

4 tbsp butter

Salt to taste

Fresh cream( optional )

1/2 -3/4 cup milk

Directions:

. First, add butter in a pan and let it melt. then put ginger garlic paste in the butter and let it splatter well. Once it’s cooked, add the sauces. If you don’t have sauces you can change the recipe by adding homemade bleached tomatoes.

. Then, let it cook completely till butter surfaces out and then the seasonings. Once it’s done then take it out in a bowl.

. Moving on with the white sauce, add butter and flour in another pan. It will form a crumbly texture which is perfect.

. Add the milk and whisk till everything it mixed. Once it’s combined it will start to thicken . If you want you can add some cheese too but it’s completely optional.

. Then, add the seasonings. The consistency should look something like this:

. Mix the two sauces together to form a pinkish colour. The texture would be very smooth and silky. Make sure to add a tsp or two of the pasta water that you saved before.

. The actual pink sauce pasta is made by mixing red sauce and cream. Here I made white sauce separately.

. While serving make sure that the sauce and pasta are hot enough. Add some pasta to a serving plate and then some sauce over it. Serve it with a dash of coriander leaf.
