Mini pizzas! Perfect for a Netflix night🍿

Welcome to Little Chef’s Apron! Ever wondered what to eat during a movie night? Obviously, it is a time to eat junk food!! I often have movie nights on Saturdays and that gives me a lot of time to experiment on midnight snacks.

I usually just eat a pack of chips or some cookies but it still gives me a good opportunity to try out new quick recipes. 

I also like to eat mug cakes and I am planning to try pasta in a mug too.

For today, we are making mini pizzas. It is a very easy recipe and great for pizza lovers! Since they are mini pizzas, we don’t need to rise the dough for long. And they also take less time than normal pizzas.

Starting off with the recipe:

Ingredients:

2 cup all purpose flour

¾ tsp instant yeast

1 tbsp sugar

Salt to taste

¾ cup water

2 tbsp oil

2 tomatoes

1 tbsp butter

Seasonings of your choice

1 block grated mozzarella cheese

Directions:

First, add the yeast, sugar and water to a bowl. Make sure that the water is warm for the yeast to activate. Let it rest for 2-3 minutes until the yeast gets activated in the yeast and froths up.

Meanwhile, add the flour, salt and oil to a bowl and mix well. The oil should be rubbed well with the flour.

Add the yeast water to this and start forming a dough. If required add more water. Form the dough with your hands, and if it sticks then add some flour or oil.

Keep kneading for 7-8 minutes until smooth and springs back when pressed with a finger. Grease with some oil on top and cover with a cloth. Let it rise for 30-40 minutes.

In a pan, add some butter and grated garlic cloves. After fried, add pureed tomatoes. This should take about 3 minutes to cook. Once it is red and butter starts to surface out, keep stirring. Add salt to taste and seasonings like oregano and pepper.

Divide the risen dough into equal parts and make small sized balls. Flatten them and with your hands stretch them out to a mini circle. Place them on a greased tray and add a spoonful of the sauce prepared earlier.

Also add some cheese on top and bake them in a preheated oven at 180 °C for 15 minutes. If the crust and cheese is golden brown then you can serve them. If not then bake for 3-4 minutes more.

My sister and I enjoyed these with some popcorn and a glass of coke. It is a really nice combination and tastes really good! I hope you guys liked this recipe and do let me know in the comments below. Let me know your thoughts and if you have any suggestions or questions.

  2. Yours look much healthier than my mini-pizzas. But English muffins are so easy to use. I just cover them with whatever topping and bake until the cheese melts. Getting kinda lazy in my old age! 😊

    1. Well, look wise I don’t know. But all pizzas have flour😂 very unhealthy!
      I haven’t used them yet. I haven’t seen them in grocery stores here.But if I do, based on your recommendation will definitely try them out! Old or young, everybody is lazy😂😂😂

    1. Well, without the sugar, yeast wouldn’t have any food . And without food it wouldn’t work it’s magic. It wouldn’t make the dough rise. It would be flat and taste like flat bread😊
