Welcome to Little Festival world! Diwali is around the corner and I would love to share all the recipes and pakwaan made in our house. On this festival, along with me, my sweet mom also made delicious dishes.
So , burfi and boondi ke laddoo are already posted on my blog and you can check them out.We went all out for this time’s Diwali so we can get the full fun out of the lockdown addition. I have also made some videos for you to understand better.Apart from that we made:
Cookies with homemade almond flour:
This was made by me and is very easy to make. I improvised a little on them from my last post.
Ingredients:
1/4 cup almonds(not roasted and not salted)
1/2 cup powdered sugar
1/2 cup softened unsalted butter
1 cup whole wheat flour
1/2 tsp baking soda
1 tsp baking powder
1 tsp vanilla essence
Chocolate chips( optional )
2-3 tbsp milk for binding
1 tbsp cornflour
Directions:
. First, add the butter, sugar, vanilla to a bowl and whisk it till it becomes fluffy and changes its colour to white.

. Then sieve together, wheat flour, baking powder and soda in a bowl and keep it aside. Then in a blender jar, add the almonds and make a fine powder out of it. Seive this with the cornflour in the same bowl.

. If there are any granules left, blend it again and then sieve.
. Add the butter to this and make a dough. Bind it with milk and add it slowly. If you want chocolate chips, add it at this point.
. Then, keep it in the fridge for 15-29 minutes and then preheat the oven at 170*C for 10 minutes. Shape the cookies according to your preference of size . Make sure that the tray is greases with oil,
. Bake them at 170*C for 20-25 minutes and let them cool completely before consuming them.

Boondi/motichoor ke ladoo
For this, I would say that it was very much improved from my earlier attempt. I made them in orange colour this time and also had zaara
The setup for taking out they boondi after frying is something like this:




Badaam burfi:
Each time I made kesar burfi or pista burfi. This time I made badaam burfi. The actual one is made with khoya but I always make an instant one.
. All you have to do is just add the almonds in a chopper and add the powder to the mixture. Make sure to garnish the mixture with a contrasting colour of nuts to get that beautiful presentation.


Namak paara and matthri:
These were made by my mom and must I say that they were incredibly delicious! Each time she makes them, it gets better and better. The were completely store bought and very tasty.
Maybe one day I’ll learn from her but today, I can give you vague idea:
She made a dough out of all purpose flour, salt, oil and water.
Then she rested the dough for about half and hour and cut it into the namak paara shape and matthri shape. She fried it in hot oil and then served!


Naan khattai:
Naan khattai are like Indian cookies. They have wonderful flavours in them. My mom added, ghee instead of butter and gram flour and semolina instead of flour along with some flour.
Instead of vanilla, cardamom powder is used.
They were delicious and once you have them, you would not regret knowing how to make them!

Moong Dal halwa:
This recipe is that where a lot of effort and calories are put in. But trust me it is really worth your time. After making it, you would realise the value of all your hard work.
This too I would learn but here are a few glimpses.
She soaked the moong dal in water for 4-5 hours and then made a paste out of it without the water.
Then she added ghee to a Kadhai and then the semolina. After that she added the sugar and then stirred for 20-25 minutes.
Then she added hot milk mixed with some water,cardamom and saffron. Then till the mixture thickened she stirred it continuously. She also added some nuts and then served!

They were pretty good! (My mom had to watch us to make sure we didn’t eat any before they cooled 😂). My family calls them “shankar paari”. They are square/ diamond shaped and you deep fry them! 😃 (I noticed them in your post too, but I think you call it a different name).
